Have you tried eating raw fish fresh from the sea? Well, Fish Kinilaw is a favourite Cebuano dish wherein the day’s fresh catch is dressed in palm coconut vinegar, ginger, chili and spices. There are three varieties of fish kinilaw:
1. Kinilaw na Dilis is another variety of raw fish salad made of fresh anchovies fillet mixed with vinegar, chili, onion, ginger, calamansi juice, salt and pepper.
2. Kinilaw na Tuna is a raw fish salad made of fresh tuna mixed with vinegar, garlic, onion, ginger, calamansi juice, salt and pepper.
3. Kinilaw na Tanigue is a raw fish salad made of fresh tanigue mixed with vinegar, garlic, onion, ginger, calamansi juice, salt and pepper.
