In Hong Kong, Thai Shing Restaurant's shrimp sashimi has the best raw shrimp sashimi in town. This is usually served up in a bed of ice and garnished with a slice of raw garlic. Ingredients:
10-12 shrimps, sashimi grade
20g cilantro, stem only
1 lemongrass
1 red bird chili
2 lime, juiced
2 tbsp water
2 tbsp fish sauce
1 tbsp minced garlic
1 tbsp sugar
Instructions:
1. Finely chop the lemongrass and red chili.
2. Chop the stem of the cilantro.
3. Clean and devein the shrimp then butterfly.
4. Place the shrimp flat on the plate.
5. In a mixing bowl, combine the rest of the ingredients and mix together.
6. Drizzle over the shrimp and serve cold.
