Usually during the winter season, Japan and Tokyo in particular is usually deluged with the nostalgic, nutty aroma of roasted sweet potatoes and the usual noise emanating from the yaki-imo trucks can be heard in every neighborhood. Yaki-imo usually disappear around late spring but the curiously-named daigaku-imo sugar-crusted sweet potato snack can be found all-year-round.
Take a look around your local grocery store or the basement food courts in department stores like Takashimaya to get your daigaku-imo sweet potato fix.
How to Prepare Yako-imo
Ingredients

Directions
1. Start heating the oven to 150-160C (approx. 300-320F).
2. Wash the potatoes and wrap in foil without drying surface.
3. Put in the oven (oven does not need to be fully preheated to set temperature), and roast for 1-2 hours. Roasting for 70-80 minutes is usually enough.
4. If unsure, check by inserting a skewer. If time allows, leave the potatoes in oven for another 30 minutes or so after turning it off.
5. Serve them hot.
Yaki-imo is known as Kamote.
