Although it is called Chicken on the Fields, it is actually made from frog meat. Don’t be grossed out. The slimy frog meat is even superior to chicken in every way.

Tin Gai is the perfect pair for that cold Tsingtao beer and Shanghai's four-legged answer to the buffalo wings. It's cheap and plentiful because virtually every restaurant line cook can whip up a masterful dish of frog.

Paddy field chicken is also known as Chinese edible frog or East Asian bullfrog. The meat is very lean, low in fats, rich in protein, omega-3 fatty acids, vitamin A and potassium. It is believed to boost immune function and energy levels. Texture wise, it is more like chicken, but slightly chewy and flavor is mild, slightly fishy.
